No Bake Chocolate Haystacks

I shared this DELICIOUS treat on my instagram stories earlier this week and had several people reach out for the recipe! So here it is... super quick and easy.

  • 2 cups sugar

  • 1/2 cup milk

  • 1/2 cup butter

  • 1/4 tsp salt

  • 1/2 cup unsweetened cocoa powder

  • 1/2 tsp vanilla

  • 3 cups quick cooking oats

  • 1 cup unsweetened coconut

  1. In medium pot on medium heat stir sugar, milk, butter and salt. Keep stirring until mixture starts to boil.

  2. Add cocoa powder and keep stirring for ~4min keeping the mixture at a low boil

  3. Turn burner off but do not remove mixture from heat. Add vanilla, oats and coconut

  4. Stir mixture well

  5. Once completely mixed, drop 1 spoonful onto parchment paper

  6. Let cool completely

  • In step one if the mixture is beginning to look dry you can dribble small amounts of milk (~ 1 tbsp of milk) will prevent total dry-out.

  • In step three if you remove the mixture from the burner it will cool to quickly and the end product will not form properly

  • If using sweetened coconut, reduce sugar to 1 cup

  • Haystacks will cool quickly, once cooler they will harden slightly to prevent disintegration
